- Preheat your oven to 200°C (390°F).
- Sauté the onion: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Cook the potatoes: Add the sliced potatoes to the skillet, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally. Transfer the potatoes and onions to a baking dish.
- Brown the chicken: In the same skillet, add the remaining olive oil and cook the cubed chicken breasts until browned on all sides. Season with salt, black pepper, and red pepper. Transfer the chicken to the baking dish, arranging it over the potatoes.
- Prepare the sauce: In a bowl, whisk together the beaten eggs, cream, salt, curry powder, and Provencal herbs. Pour the mixture over the chicken and potatoes in the baking dish.
- Add the toppings: Arrange the tomato slices on top and sprinkle with grated Gruyère cheese.
- Bake: Place the baking dish in the preheated oven and bake for 40 minutes.
- Final touch: Remove the dish from the oven, let it cool slightly, and serve warm.
