  • 6 medium potatoes, peeled and cut into even pieces
  • 1 teaspoon salt for boiling potatoes
  • 1 onion, sliced into thin half-rings
  • 2 cans (5 oz each) tuna in oil, drained and mashed
  • 150 ml (5.3 fl oz) heavy cream or whipping cream
  • Zest of 1/2 lemon
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 200 g (7 oz) mozzarella cheese, shredded
  • Olive oil, for greasing
  • 1 sprig of fresh rosemary optional

Method
 

Preparation
  1. Boil the Potatoes: Place the peeled and cut potatoes in a pot.
  2. Cover with cold water, add 1 teaspoon salt, and bring to a boil.
  3. Reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender.
  4. Drain and let cool slightly.
  5. Prepare the Onion and Tuna: While the potatoes cook, slice the onion into thin half-rings.
  6. Drain the oil from the canned tuna and mash it with a fork in a bowl.
  7. Assemble the Casserole: Preheat oven to 200°C (390°F).
  8. Grease a baking dish with olive oil.
  9. Layer the Ingredients: Place half of the sliced potatoes as the base layer in the dish.
  10. Add a layer of sliced onions over the potatoes.
  11. Spread the mashed tuna evenly over the onions.
  12. Sprinkle half of the shredded mozzarella cheese over the tuna.
  13. Make the Cream Sauce: In a medium bowl, whisk together heavy cream, lemon zest, and minced garlic.
  14. Season with salt and black pepper to taste.
  15. Complete the Layers and Bake: Pour the cream sauce evenly over the casserole.
  16. Add the remaining sliced potatoes and sprinkle with the rest of the shredded mozzarella cheese.
  17. Place a sprig of fresh rosemary on top for added fragrance (optional; remove before serving).
  18. Bake in the preheated oven for 25-30 minutes or until the cheese is melted, bubbly, and golden.
  19. Serve: Let the casserole cool slightly before serving. Enjoy warm with your favorite side dish or salad.
