- Prepare the Bread Base: Preheat your oven to 180°C (350°F). Lightly grease a small baking dish. Place the bread slices in the bottom, slightly overlapping to form a base. Spread ketchup evenly over the bread.
- Whisk the Eggs: In a bowl, beat the eggs with salt and pepper until well combined. Pour this mixture evenly over the bread slices to soak them.
- Add the Toppings: Arrange the tomato slices and sausage rounds over the egg-soaked bread. Sprinkle half of the grated Suluguni cheese on top.
- Bake: Place the dish in the oven and bake for 15–20 minutes until the eggs are set and the sausages are cooked through.
- Finish with Cheese: Sprinkle the remaining Suluguni cheese on top and return to the oven for 5–7 minutes, or until the cheese melts and turns golden.
- Serve: Remove from the oven, garnish with chopped parsley, and serve warm straight from the dish.
