- Boil the Potatoes: Start by peeling and boiling the potatoes in a large pot with salted water. Cook them until they are tender and easily pierced with a fork, which should take about 15-20 minutes. Drain the potatoes and set them aside to cool.
- Mash the Potatoes: Once the potatoes are cool enough to handle, mash them in a large mixing bowl until smooth. There should be no lumps to ensure a consistent texture in the final product.
- Prepare the Mixture: To the mashed potatoes, add the salt, sugar, chopped parsley, and starch. Start with ½ glass of starch, and add more if needed to achieve a firm but slightly sticky dough. Grate the Cheddar cheese and mix it into the potato mixture thoroughly.
- Shape the Bites: Take small portions of the potato mixture and roll them into bite-sized balls or patties. Make sure each piece is uniform in size for even cooking.
- Fry the Bites: Heat the vegetable oil in a large frying pan over medium heat. Once the oil is hot, gently place the potato bites in the pan, making sure not to overcrowd them. Fry until golden brown on all sides, about 3-5 minutes per side. Remove from the pan and place them on a paper towel-lined plate to drain excess oil.
- Serve: Serve the cheesy potato bites hot, garnished with some extra parsley for a pop of color.
