  • 5 medium-sized potatoes

  • 1 tablespoon mayonnaise
  • 1 medium white onion, chopped
  • 2 cloves garlic, minced
  • 1 large carrot, grated
  • 1 medium red bell pepper, chopped
  • Green onions, for garnish
  • 60 grams (2.11 ounces) butter
  • 50 grams (1.76 ounces) flour
  • 400 milliliters (13.52 fluid ounces) milk
  • 2 sausages, sliced
  • 100 grams (3.52 ounces) mozzarella cheese, grated

Preparation
  1. Potato Preparation: Thinly slice the potatoes (about ⅛ inch thick) to ensure they cook evenly. Russet or Yukon Gold potatoes work best for their texture.
  2. Egg Mixture: Whisk the eggs and milk thoroughly to make the custard base, which will hold the casserole together. Seasoning with salt and pepper at this stage distributes the flavor evenly.
  3. Layering: Layering potatoes, eggs, and cheese allows each layer to soak in the egg mixture and helps with even cooking. Aim for two layers, but depending on the size of your baking dish, you may have more or fewer.
