- Sauté the VegetablesHeat 1 tablespoon of oil in a small skillet over medium heat. Add chopped carrots and celery. Sauté for 3–4 minutes until slightly softened. Remove from heat and allow to cool.
- Prepare the Potato MixtureIn a mixing bowl, combine the mashed potatoes, salt, garlic powder, ground pepper, and the sautéed vegetables. Stir in the mozzarella cheese. Gradually add the cornstarch and mix until the dough is firm and moldable. The mixture should not be sticky.
- Shape the BitesScoop out small portions and shape them into balls or nuggets using your hands. You can also flatten them into discs if you prefer a croquette-style appearance.
- Cook the BitesYou can fry the bites in hot oil until golden and crispy, or bake them at 200°C (390°F) for 20 minutes, flipping halfway through. Air frying at 180°C (355°F) for 10–12 minutes is also a great low-oil option.
- Make the Cheese SauceIn a saucepan over low heat, melt the butter. Stir in the flour and cook for 1–2 minutes to form a roux. Slowly pour in the milk, whisking constantly to avoid lumps. Once the sauce thickens, add the cheddar cheese and stir until melted. Add the spicy sauce and mix well.
- ServeServe the warm mashed potato bites with a generous drizzle or side of the cheese sauce. Garnish with chopped parsley or extra shredded cheese if desired.
- Can I use instant mashed potatoes?Yes, as long as they’re firm and cooled. Make sure they’re not too soft or runny.
- Can I freeze these bites?Absolutely. Freeze before cooking, and bake or fry straight from frozen. Add a few extra minutes to the cook time.
- Can I substitute cornstarch with flour?Yes, but the texture may be slightly heavier. Cornstarch creates a lighter, crispier finish.
- How do I reheat leftovers?Bake in a preheated oven at 180°C (355°F) for 5–7 minutes or until hot and crispy.
- Can I make the cheese sauce less spicy?Of course! Omit the spicy sauce or reduce the amount to make it milder.
- Is it possible to bake instead of fry?Yes, bake at 200°C (390°F) for 20 minutes, flipping halfway through for even crisping.
- What cheese works best inside the bites?Mozzarella for meltiness. You can also try gouda or fontina for more flavor.
- Can I make these gluten-free?Yes. The bites are already gluten-free if you use cornstarch. For the sauce, use gluten-free flour.
- Why are my bites falling apart?Your mash may be too soft or wet. Try chilling the mixture or adding more cornstarch.
- Can I add protein to the filling?Yes, you can mix in cooked, shredded chicken or crumbled bacon for a heartier bite.
