Cheesy Green Onion Flatbread (No Yeast, No Oven)

  • 95 ml water
  • 1.5 g (0.25 tsp) salt
  • 150 g (1 cup) flour
  • 30 g green onion, chopped
  • A pinch of baking soda
  • 50 g cheese, grated
  • 1/4 cup flour for dusting
  • 1/4 cup corn starch
  • 20 g salted butter
  • Oil for frying

Preparation
  1. Prepare the Dough: In a large mixing bowl, combine the water and salt. Stir until the salt is dissolved.
  2. Add the flour, chopped green onion, and a pinch of baking soda to the bowl. Mix until a dough forms.
  3. Incorporate the Cheese: Add the grated cheese to the dough and knead until the cheese is evenly distributed.
  4. Rest the Dough: Cover the dough with a clean cloth and let it rest for about 10 minutes.
  5. Prepare the Work Surface: Sprinkle the work surface with 1/4 cup of flour and 1/4 cup of corn starch. This will prevent the dough from sticking.
  6. Roll Out the Dough: Divide the dough into smaller portions. Roll each portion into a flat round shape, about 1/4 inch thick.
  7. Fry the Flatbreads: Heat a generous amount of oil in a frying pan over medium heat.
  8. Fry each flatbread for about 2-3 minutes on each side, or until golden brown and crispy.
  9. Add the Butter: While the flatbreads are still hot, brush them with melted salted butter for extra flavor.
