  • 1 large head of cauliflower, cut into thick steaks or florets
  • 1/2 cup all-purpose flour or gluten-free alternative
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup unsweetened plant-based milk
  • 1 cup breadcrumbs panko or regular
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix the flour, salt, black pepper, and garlic powder.
  3. In another bowl, add plant-based milk. In a third bowl, place breadcrumbs.
  4. Dredge each cauliflower steak/floret first in the flour mixture, then dip in plant-based milk, and finally coat with breadcrumbs.
  5. Heat olive oil in a large skillet over medium heat and pan-fry the cauliflower for 2-3 minutes per side until golden.
  6. Transfer to a baking sheet and bake for 15 minutes, flipping halfway through, until crispy.
  7. In the same skillet, melt vegan butter over medium heat. Add garlic and sauté for 1 minute.
  8. Stir in vegetable broth, lemon juice, capers, and red pepper flakes. Simmer for 3-4 minutes until slightly thickened.
  9. Spoon the sauce over the crispy cauliflower and garnish with fresh parsley.
  10. Serve hot with pasta or mashed potatoes.
