Cast Iron Irish Apple Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 8 tablespoons butter 1 stick
  • 2/3 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 egg, beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 medium apple, sliced thinly about 1 cup
  • 1 tablespoon sugar
  • Dash of ground cloves
  • Dash of cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 10-inch cast-iron skillet with parchment paper. Set aside.
  2. In a large bowl, combine flour and baking powder. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Whisk the sugar, cinnamon, and nutmeg into the flour and butter mixture.
  4. Make a well in the center and add the beaten egg, milk, and vanilla extract. Mix until a soft, almost scone-like dough forms.
  5. Spoon and press the dough into the bottom of the prepared skillet. Layer the thinly sliced apples over the dough.
  6. In a small bowl, combine 1 tablespoon of sugar with a dash each of ground cloves and cinnamon. Sprinkle over the apples.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the middle comes out clean.
  8. Switch the oven to broil and broil for 2-3 minutes until the edges are golden brown (optional but recommended for added crispness).
  9. Let cool slightly, then cut into wedges. Dust with powdered sugar or serve with whipped cream or ice cream.
