  1. Prepare the Carrots: Begin by peeling and washing the carrots. Grate them finely using a box grater or food processor.
  2. In a large pan, add the grated carrots and 100g sugar.
  3. Cook over medium heat, stirring frequently until the carrots soften and the sugar dissolves completely, about 10-12 minutes. The natural sweetness of the carrots will begin to intensify as they cook.
  4. Incorporate the Yogurt: Once the carrots are soft and tender, remove the pan from the heat and let it cool for a few minutes.
  5. Add 100g white yogurt to the carrot mixture and stir until the yogurt is fully incorporated. This step adds a creamy texture and a slight tanginess to balance the sweetness of the carrots.
  6. Mix in the Coconut Flour: Gradually add 150g coconut flour to the carrot and yogurt mixture. Stir well until the mixture begins to come together.
  7. The coconut flour will absorb the moisture from the carrots and yogurt, helping to bind the ingredients into a cohesive dough-like texture.
  8. If the mixture feels too wet, you can add a little more coconut flour, one tablespoon at a time, until it reaches the right consistency for rolling.
  9. Shape the Balls: Once the mixture is well-combined, allow it to cool to room temperature. This will make it easier to handle.
  10. Using your hands, take a small portion of the mixture (about the size of a tablespoon) and roll it into a ball.
  11. Repeat this process until all the mixture is used up, making sure each ball is uniform in size.
  12. Coat with Coconut and Chocolate Granules: Spread coconut flakes on a plate. Roll each ball in the coconut flakes, ensuring they are fully coated.
  13. For extra sweetness and decoration, gently press a few chocolate granules onto each ball. The chocolate adds a nice contrast to the coconut and complements the flavor of the carrots.
  14. Chill the Balls: Once all the balls are coated, place them on a tray lined with parchment paper.
  15. Chill in the refrigerator for 1-2 hours to allow the flavors to meld together and the texture to firm up.
  16. Serve chilled and enjoy!
