How to Make Smashed Cucumber Salad
  1. Start by washing and drying the Persian cucumbers thoroughly. Cut each cucumber in half, and using the flat side of a knife, smash each half gently. Chop the smashed cucumbers into 1-inch pieces and place them in a large bowl.
  2. Next, peel and chop the ripe avocado, adding it to the bowl with the cucumbers. Toss in the crumbled feta, chopped pistachios, dill, and chives for a burst of flavor and texture.
  3. In a separate jar or bowl, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, minced garlic, and a sprinkle of salt and pepper. Whisk everything together until it’s beautifully emulsified.
