- In a small bowl, mix together the blackening spices. Ensure your salmon fillets are dry, then coat them liberally with the spice blend.
- Place a large skillet over medium-high heat and add oil. Allow the oil to heat until it's shimmering.
- Carefully add the seasoned salmon fillets to the hot skillet. Sear for 3-4 minutes on each side until a deep golden crust forms.
- In a mixing bowl, combine softened cream cheese, fresh spinach, and grated Parmesan. Stir until thoroughly mixed.
- Gently take each seared salmon fillet and use a spoon to stuff it with the spinach mixture. Portion evenly.
- Preheat your oven to 375°F (190°C). Place the stuffed salmon in a baking dish and bake for 15-20 minutes.
- Once out of the oven, let the salmon rest for a few minutes. Serve immediately with chosen sides.
