  • 2 tbsp Blackening spice blend adjust spice level to preference
  • 2 tbsp Oil for pan-searing; use canola or avocado

Preparation
  1. In a small bowl, mix together the blackening spices. Ensure your salmon fillets are dry, then coat them liberally with the spice blend.
  2. Place a large skillet over medium-high heat and add oil. Allow the oil to heat until it's shimmering.
  3. Carefully add the seasoned salmon fillets to the hot skillet. Sear for 3-4 minutes on each side until a deep golden crust forms.
  4. In a mixing bowl, combine softened cream cheese, fresh spinach, and grated Parmesan. Stir until thoroughly mixed.
  5. Gently take each seared salmon fillet and use a spoon to stuff it with the spinach mixture. Portion evenly.
  6. Preheat your oven to 375°F (190°C). Place the stuffed salmon in a baking dish and bake for 15-20 minutes.
  7. Once out of the oven, let the salmon rest for a few minutes. Serve immediately with chosen sides.
