Preparation
- Preheat the Oven: Preheat the oven to 375°F (190°C). Drizzle 2 tablespoons of the melted butter into a 9x13-inch baking pan and reserve the rest.
- Prepare the Greens: Drain the thawed greens in a colander and squeeze out the excess water. Place the greens in a large bowl.
- Make the Filling: Crumble the feta (reserve 1/2 cup for topping) and add it to the bowl with the greens. Mix in green onions, garlic, parsley, mint, dill, couscous, salt, and pepper. In a separate bowl, whisk the eggs and add them to the greens mixture.
- Make the Batter: In a large bowl, whisk together the flour, baking powder, and salt. In the egg bowl, combine the 2 eggs, Greek yogurt, and olive oil. Whisk until smooth. Stir in 1 cup of water into the egg mixture, then add it to the flour mixture, creating a thick batter.
- Assemble the Dish: Scoop a rounded cup of batter into the buttered pan and spread it into a thin layer. Whisk the remaining 1/4 cup of water into the remaining batter and stir in the reserved feta.
- Layer and Bake: Sprinkle the greens mixture over the batter. Drizzle the remaining batter and melted butter over the top. Bake for 50 to 60 minutes, until golden and bubbling. Let cool for 5 minutes before cutting.
