Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with a silicone baking mat or parchment paper.
- In a large bowl, whisk together the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
- Cut in the cold butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the milk, egg, and vanilla extract.
- Gradually add the wet ingredients to the dry mixture, stirring just until combined. Fold in the chopped apples.
- Using a 1/4 cup measure, drop mounds of dough onto the prepared baking sheet.
- Bake for 11–13 minutes or until the bottoms are golden brown and the centers are set.
- Remove from the oven and increase the temperature to broil.
- Prepare the glaze by whisking together the confectioners’ sugar, milk, and vanilla extract.
- Brush a thin layer of glaze over each fritter, then broil for 2–4 minutes until the tops are golden and the glaze bubbles slightly.
- Remove from the oven, glaze again, and allow to set on a wire rack before serving.
