Baked Apple Fritters

  • 3/4 cup all-purpose flour
  • 3/4 cup white whole wheat flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 6 tbsp butter, cold and cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup finely chopped apples

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with a silicone baking mat or parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
  3. Cut in the cold butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  5. Gradually add the wet ingredients to the dry mixture, stirring just until combined. Fold in the chopped apples.
  6. Using a 1/4 cup measure, drop mounds of dough onto the prepared baking sheet.
  7. Bake for 11–13 minutes or until the bottoms are golden brown and the centers are set.
  8. Remove from the oven and increase the temperature to broil.
  9. Prepare the glaze by whisking together the confectioners’ sugar, milk, and vanilla extract.
  10. Brush a thin layer of glaze over each fritter, then broil for 2–4 minutes until the tops are golden and the glaze bubbles slightly.
  11. Remove from the oven, glaze again, and allow to set on a wire rack before serving.
