  • 2 cloves Garlic, minced Enhances flavor with aromatic qualities.
  • 1/2 tsp Dried Oregano Adds herbal notes for flavor complexity.
For the Binder
  • 50 g Breadcrumbs Binds the meatloaf, providing texture. Use gluten-free breadcrumbs for a gluten-free version.
  • 60 ml Milk Soaks the breadcrumbs for extra moisture. Non-dairy milk can be used for lactose-free options.
For the Glaze
  • 2 tbsp Ketchup Provides sweetness and moisture to both the meat and glaze.
  • 3 tbsp Ketchup for glaze
  • 1 tbsp Brown Sugar (optional for glaze) Adds an extra touch of sweetness to the glaze.
For the Seasoning
  • 1 tbsp Worcestershire Sauce Adds umami flavors; ensure to use a gluten-free version if needed.
  • 1 tsp Dijon Mustard Introduces tanginess to brighten up the flavor.

For the Wrap
  • 6-12 slices Bacon Crispy topping that wraps around the meatloaf, adding flavor. Turkey bacon is a lower-fat substitute.

Method
 

Preparation
  1. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper or foil.
  2. Soak the breadcrumbs by combining them with milk in a small bowl and allowing them to sit for about 5 minutes.
  3. Mix together the ground beef, ground pork, soaked breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, mustard, salt, pepper, and oregano in a large bowl until just combined.
  4. Shape the mixture into 6 equal portions, forming each one into a small loaf.
  5. Wrap each mini loaf with 1-2 slices of bacon, securing them if necessary.
  6. Place the wrapped mini loaves on the prepared baking sheet. Brush them with the glaze made from the remaining ketchup and brown sugar.
  7. Bake for 30-35 minutes until the bacon is crispy and the meatloaves are cooked through.
  8. Check the internal temperature using a meat thermometer to ensure they reach 71°C (160°F). If you want extra crispiness, broil for an additional 2-3 minutes.
  9. Rest the mini meatloaves for about 5 minutes before serving.
