Preparation
- Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper or foil.
- Soak the breadcrumbs by combining them with milk in a small bowl and allowing them to sit for about 5 minutes.
- Mix together the ground beef, ground pork, soaked breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, mustard, salt, pepper, and oregano in a large bowl until just combined.
- Shape the mixture into 6 equal portions, forming each one into a small loaf.
- Wrap each mini loaf with 1-2 slices of bacon, securing them if necessary.
- Place the wrapped mini loaves on the prepared baking sheet. Brush them with the glaze made from the remaining ketchup and brown sugar.
- Bake for 30-35 minutes until the bacon is crispy and the meatloaves are cooked through.
- Check the internal temperature using a meat thermometer to ensure they reach 71°C (160°F). If you want extra crispiness, broil for an additional 2-3 minutes.
- Rest the mini meatloaves for about 5 minutes before serving.
