- Shred the Cabbage: Begin by cutting the white cabbage into thin strips. If you are using young cabbage, it will have a softer texture and a sweeter taste, making it perfect for stir-frying.
- Grate the Carrot: Peel and grate the carrot into fine shreds. You can also julienne the carrot if you prefer larger pieces.
- Chop the Green Onions: Finely chop the green onions. This will be used as both an ingredient in the stir-fry and a garnish.
- Mince the Garlic: Peel and mince 1 clove of garlic. This will add a rich aroma to the dish.
- Heat the Oil: In a large skillet or wok, heat 2.5 tablespoons of vegetable oil over medium heat. Once the oil is hot, add the minced garlic and stir-fry for 30 seconds until fragrant.
- Add the Cabbage and Carrot: Add the shredded cabbage and grated carrot to the skillet. Stir-fry for 5-7 minutes, stirring frequently, until the vegetables begin to soften but still retain some crunch.
- Season the Vegetables: Season the vegetables with a pinch of salt and black pepper to taste. The soy sauce and teriyaki sauce will also add saltiness, so be cautious when adding extra salt.
- Prepare the Eggs: Crack 3 eggs into a small bowl and lightly whisk them with a fork or whisk.
- Make Space in the Pan: Push the cabbage and carrots to one side of the skillet to make space for cooking the eggs.
- Cook the Eggs: Pour the beaten eggs into the empty space in the skillet. Let the eggs cook undisturbed for a few seconds, then scramble them gently, mixing them with the cabbage and carrots. Continue cooking until the eggs are fully set.
- Pour in the Soy and Teriyaki Sauce: Add 2 tablespoons of soy sauce and 2 tablespoons of teriyaki sauce to the skillet. Stir everything well to ensure the vegetables and eggs are coated evenly with the sauce.
- Toast the Sesame Seeds: Add 1 teaspoon of sesame seeds to the skillet and continue stir-frying for another minute to toast the seeds slightly. This will enhance their nutty flavor.
- Add Green Onions: Stir in most of the chopped green onions, saving a few for garnish.
- Serve Hot: Transfer the stir-fried cabbage with eggs to a serving dish. Garnish with the remaining green onions and an extra sprinkle of sesame seeds if desired.
