- Prepare the Apples: Peel, core, and dice the apples into small pieces. Make sure the pieces are small and even, so they cook consistently.
- Mix the Cinnamon Sugar: In a bowl, combine the brown sugar, granulated sugar, ground cinnamon, and optional nutmeg. Stir well to create a spiced sugar mixture.
- Prepare the Biscuit Dough: Open the can of refrigerated biscuits. Separate each biscuit and cut them into quarters. Each large biscuit will yield four smaller pieces, ideal for bite-sized treats.
- Coat the Apples: Add the diced apples to the cinnamon-sugar mixture and stir to coat each piece well. This will give the apples a lovely spiced sweetness when they bake.
- Assemble the Biscuit Bites: Flatten each biscuit piece slightly, place a small spoonful of the spiced apples in the center, and then pinch the edges to enclose the filling, creating a small ball.
- Place each filled biscuit bite seam-side down on a lined baking sheet or in a greased muffin tin.
- Brush with Butter and Bake: Brush the tops of each biscuit bite with the melted butter, then sprinkle a bit more of the cinnamon-sugar mixture on top for extra sweetness and flavor.
