  1. Prepare the Batter: Crack the eggs into a large mixing bowl. Add a pinch of salt and whisk until the eggs are frothy.
  2. Add the vanilla sugar and regular sugar to the bowl, and continue whisking until the mixture is light and fluffy.
  3. Add Wet Ingredients: Slowly pour in the oil while whisking continuously to incorporate it fully.
  4. Add the milk and whisk again until the mixture is smooth and well combined.
  5. Combine Dry Ingredients: In a separate bowl, sift together the flour and baking powder to ensure they are well mixed and free of lumps.
  6. Gradually add the dry ingredients to the wet mixture, folding gently to combine. Be careful not to overmix, as this can make the batter dense.
  7. Assemble the Dessert: Preheat your oven to 180°C (350°F) if you prefer to bake this dessert, or prepare a non-stick frying pan if you want to cook it on the stovetop.
  8. Pour half of the batter into a greased baking dish or pan.
  9. Add a layer of apricot jam over the batter, spreading it evenly but leaving a small border around the edges to prevent the jam from leaking out during cooking.
  10. Pour the remaining batter over the jam, ensuring it is evenly distributed.
  11. Cook the Dessert: If baking, place the dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  12. If cooking on the stovetop, cover the pan with a lid and cook on low heat for about 10-15 minutes, or until the dessert is set and a toothpick inserted into the center comes out clean.
  13. Finish and Serve: Allow the dessert to cool slightly before dusting with powdered sugar.
  14. Slice into squares or wedges and serve warm. Enjoy this delightful treat with a cup of tea or coffee.
