Preparation
- In a bowl, mix two packets of lemon gelatin with 1 ¾ cups of boiling water. Stir until completely dissolved and the mixture is clear.
- Gradually incorporate 1 ¾ cups of cold water into the dissolved gelatin.
- Pour the gelatin mixture into containers and refrigerate for about 2 hours, or until it has set and is firm to the touch.
- In a large mixing bowl, whip together the heavy cream and sweetened condensed milk until smooth and fluffy. Slowly stir in the freshly squeezed lemon juice.
- Once the gelatin has fully set, cut it into medium-sized cubes.
- In a glass dish, layer the gelatin cubes evenly and spread the mousse over them.
- Optionally, sprinkle some lemon zest on top for extra flavor.
- Return the assembled dessert to the fridge for at least 2 more hours.
- Ensure the dessert is firm and chilled before serving.
