  • 1.75 cups Boiling Water Must be at a rolling boil
  • 1.75 cups Cold Water

  • 1 cup Sweetened Condensed Milk Plant-based version works for dairy-free
  • 1/2 cup Lemon Juice Freshly squeezed is highly recommended

Method
 

Preparation
  1. In a bowl, mix two packets of lemon gelatin with 1 ¾ cups of boiling water. Stir until completely dissolved and the mixture is clear.
  2. Gradually incorporate 1 ¾ cups of cold water into the dissolved gelatin.
  3. Pour the gelatin mixture into containers and refrigerate for about 2 hours, or until it has set and is firm to the touch.
  4. In a large mixing bowl, whip together the heavy cream and sweetened condensed milk until smooth and fluffy. Slowly stir in the freshly squeezed lemon juice.
  5. Once the gelatin has fully set, cut it into medium-sized cubes.
  6. In a glass dish, layer the gelatin cubes evenly and spread the mousse over them.
  7. Optionally, sprinkle some lemon zest on top for extra flavor.
  8. Return the assembled dessert to the fridge for at least 2 more hours.
  9. Ensure the dessert is firm and chilled before serving.
