  • 1 sheet puff pastry, thawed
  • 1 cup cooked chicken, shredded or diced
  • 120 g (4 oz) Brie cheese, cut into small cubes
  • ½ cup cranberry sauce store-bought or homemade
  • 1 Tbsp fresh thyme leaves optional, for garnish
  • 1 Tbsp honey optional, for drizzling
  • Salt and freshly ground black pepper, to taste
  • 1 egg, beaten for egg wash

Preparation
  1. Preheat the oven: Set to 190 °C (375 °F). Grease or line a mini muffin tin.
  2. Prep the pastry: On a lightly floured surface, roll out puff pastry and cut into 12 equal squares (~5–7 cm each). Gently press each square into the muffin cups.
  3. Assemble tartlets: Place a spoonful of chicken in each pastry shell, followed by a cube of Brie and 1 tsp cranberry sauce. Season lightly with salt and pepper.
  4. Apply egg wash: Brush the edges with beaten egg for a glossy, golden finish.
  5. Bake: Cook for 12–15 minutes until pastry is puffed and golden and Brie is melty.
  6. Finish and serve: Let cool slightly, garnish with fresh thyme and a drizzle of honey if desired. Serve warm.
