Ingredients

  • Potato: 1 medium (~300 g)
  • Water: for boiling
  • Cream Cheese: 2 tbsp
  • Salt: 1/2 tsp
  • Black Pepper: a pinch
  • Garlic Powder: 1/2 tsp
  • Parsley: 2 tbsp, chopped
  • Canned Tuna: 1 can (80 g)
  • Canned Corn: 1 can (80 g)
  • Green Olives: a handful, chopped
  • Pickled Gherkins: a handful, chopped
  • Hard-Boiled Eggs: 2, chopped
  • Sliced Bread: approximately 32 slices
  • All-Purpose Flour: 1 tbsp
  • Water: enough to make a paste
  • Mozzarella Cheese: shredded (optional, for topping)
  • Egg: 1, for egg wash
  • Paprika: 1/2 tsp

Instructions

Prepare the Potato Filling

  1. Cook the Potato:
    • Peel and cut the potato into chunks. Boil in water until tender, then drain.
  2. Mash the Potato:
    • While still hot, mash the potato in a bowl until smooth.
  3. Add Seasonings:
    • Mix in the cream cheese, salt, black pepper, garlic powder, and chopped parsley. Stir until smooth.
  4. Add Tuna and Vegetables:
    • Add the canned tuna, corn, chopped green olives, pickled gherkins, and hard-boiled eggs. Stir until well combined.

Prepare the Bread

  1. Prepare Slices:
    • Place slices of bread on a clean surface. This recipe will fill approximately 32 slices.
  2. Prepare Flour Paste:
    • Mix 1 tbsp of flour with a bit of water to create a thick paste. This will help seal the edges of the bread.

Assemble and Bake

  1. Assemble the Bread Bites:
    • Spoon a portion of the potato mixture onto each slice of bread. If using, sprinkle a bit of shredded mozzarella on top of each filling.
    • Apply the flour paste along the edges of the bread slices and press to close each slice firmly.
  2. Prepare the Egg Wash:
    • In a small bowl, beat 1 egg with 1/2 tsp of paprika.
  3. Brush with Egg Wash:
    • Brush the top of each stuffed bread with the egg wash for a golden finish.
  4. Bake:
  • Preheat the oven to 220°C (428°F).
  • Place the stuffed bread on a baking sheet lined with parchment paper and bake for 15 minutes, or until the cheese is melted and the bread is golden brown.
