– 1 pound ground beef
– 1 small onion (diced)
– 1 teaspoon garlic powder
– 1 teaspoon smoked paprika
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup frozen mixed vegetables (optional: peas, carrots, corn)
– 1 can (10.5 oz) cream of mushroom soup
– 1/4 cup sour cream
– 1 1/2 cups shredded cheddar cheese
– 1 package (16 oz) frozen tater tots
– Fresh parsley (chopped, for garnish)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef and onion over medium heat until browned and the onions are softened. Drain excess fat.
3. Stir in garlic powder, smoked paprika, salt, and black pepper. Add the mixed vegetables, cream of mushroom soup, and sour cream, mixing until combined.
4. Transfer the mixture to a greased baking dish and spread evenly.
5. Sprinkle half of the cheddar cheese over the beef mixture.
6. Arrange the tater tots in a single layer over the top.
7. Bake uncovered for 25–30 minutes, or until the tater tots are golden and crispy.
8. Remove from the oven, sprinkle the remaining cheddar cheese on top, and bake for another 5 minutes until melted.
9. Garnish with fresh parsley before serving.
Notes
Serve this with a crisp green salad or a side of garlic bread for a complete meal.
**Chef’s Tip:** For extra crunch, broil the casserole for 2–3 minutes after baking to crisp up the tater tots.
