Ingredients:

  • 1.3 kg pork loin
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • 150 g mushrooms, sliced
  • 2 eggs, beaten
  • 150 g cream cheese, softened
  • A handful of parsley and spring onions, chopped
  • 1 tablespoon lemon juice
  • 1 clove of garlic, minced
  • 130 g bacon, chopped
  • 1 large onion, chopped
  • 20 g butter
  • 1-2 carrots (optional), sliced
  • 3-4 potatoes, cubed
  • 1 teaspoon chili flakes
  • 1 teaspoon oregano
  • A bunch of parsley, chopped
  • 4 cloves of garlic, minced For the Glaze:
  • 100 g sweet chili sauce
  • 60 ml honey (or maple syrup)
  • 60 g butter
  • 2 teaspoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice

 

Directions:

  1. Preheat oven to 180°C (350°F). Season pork loin with salt and pepper.
  2. Sear pork in a skillet with vegetable oil until golden. Remove and set aside.
  3. Cook bacon in the skillet until crispy, then add mushrooms, onions, carrots, and potatoes. Cook until softened.
  4. Mix eggs, cream cheese, parsley, spring onions, lemon juice, and garlic. Season with salt and pepper.
  5. Spread mixture over pork loin, wrap with bacon, and place in a baking dish with vegetables.
  6. For the glaze, melt butter and mix with chili sauce, honey, mustard, soy sauce, and lemon juice. Pour over pork and vegetables.
