- 2 beef shanks (800 g)
- Salt and black pepper to taste
- Flour for dusting
- 50 ml oil for frying
- 30 g butter
- 1 onion, chopped
- 5 cloves of garlic, crushed
- 1 carrot, chopped
- 1 red pepper, chopped
- 2 stalks of celery, chopped
- 300 g tomatoes in their own juice
- 500 ml water
- 1 teaspoon salt
- 4 allspice berries
- 3 bay leaves
- Sprigs of rosemary
- 5 potatoes, quartered
- Freshly chopped parsley for garnish

- Rinse and pat dry beef shanks. Season with salt and pepper, and tie with twine. Dust with flour.
- In a skillet, heat oil and brown beef shanks. Remove and set aside.
