Ingredients:

  • 2 beef shanks (800 g)
  • Salt and black pepper to taste
  • Flour for dusting
  • 50 ml oil for frying
  • 30 g butter
  • 1 onion, chopped
  • 5 cloves of garlic, crushed
  • 1 carrot, chopped
  • 1 red pepper, chopped
  • 2 stalks of celery, chopped
  • 300 g tomatoes in their own juice
  • 500 ml water
  • 1 teaspoon salt
  • 4 allspice berries
  • 3 bay leaves
  • Sprigs of rosemary
  • 5 potatoes, quartered
  • Freshly chopped parsley for garnish

 

Directions:

  1. Rinse and pat dry beef shanks. Season with salt and pepper, and tie with twine. Dust with flour.
  2. In a skillet, heat oil and brown beef shanks. Remove and set aside.
  3. In the same skillet, melt butter and sauté onion, garlic, carrot, red pepper, and celery.
  4. Add tomatoes, water, salt, allspice, bay leaves, and rosemary. Simmer for 2 minutes.
  5. Return beef shanks to skillet, add potatoes, cover, and simmer for 2 hours.
  6. Garnish with parsley and serve hot.
