Ingredients:

  • 3 large potatoes (1kg)
  • 2 tablespoons of olive oil
  • A little bit of salt
  • 150g grated mozzarella for topping
  • For the Stuffing:
    • 350g minced meat
    • 1 onion, finely chopped
    • 2 garlic cloves, minced
    • 2 tablespoons of tomato sauce
    • 6 coriander sprigs, chopped
    • 2 tablespoons of olive oil
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon curry
    • 1 teaspoon salt
    • 1 teaspoon paprika
    • 100g grated mozzarella

 

Directions:

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the potatoes: Wash and dry the potatoes. Rub them with olive oil and a little bit of salt. Prick them with a fork and bake for about 45 minutes or until tender.
  3. For the stuffing: While the potatoes are baking, heat 2 tablespoons of olive oil in a pan. Add the chopped onion and minced garlic and sauté until translucent.
  4. Add the minced meat to the pan and cook until browned. Stir in the tomato sauce, coriander, salt, black pepper, curry, and paprika. Cook for another 5 minutes.
  5. Once the potatoes are done, cut them in half lengthwise and scoop out the insides, leaving a thin layer of potato.
  6. Fill the potato boats with the minced meat mixture and top with grated mozzarella.
  7. Place the stuffed potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and golden.
  8. Serve hot, garnished with fresh coriander or parsley if desired.
