Instructions
- Prepare the Chicken Breasts:
- Season the chicken breasts with salt and black pepper on both sides.
- Using a sharp knife, carefully create a pocket in each chicken breast, making sure not to cut through.
- Make the Filling:
- Finely chop the mushrooms and place them in a bowl.
- Add the processed cheese and grated cheese, and mix until combined.
- Stuff each chicken breast pocket with the mushroom-cheese mixture, pressing gently to ensure the filling is securely inside.
- Set Up the Breading Stations:
- Place the flour in one bowl, beat the eggs in another, and mix the breadcrumbs with black pepper, salt, sweet paprika, and granulated garlic in a third bowl.
- Bread the Chicken:
- Dredge each stuffed chicken breast first in flour, then dip in the beaten eggs, and finally coat with the seasoned breadcrumbs.
- Set the breaded chicken aside on a plate.
- Cook the Chicken:
- Heat butter in a large skillet over medium heat. Place the breaded chicken breasts in the pan and cook for about 5 minutes on each side, or until golden brown and crispy.
- Once browned, remove the chicken from the skillet and set aside.
- Prepare the Tomato Sauce:
- In the same skillet, add the chopped onions and minced garlic. Sauté until the onions are soft and translucent.
- Stir in the tomato sauce, salt, black pepper, and brown sugar. Mix well and simmer for 3-5 minutes, allowing the flavors to meld.
- Combine and Simmer:
- Place the browned chicken breasts back into the skillet with the tomato sauce, spooning sauce over the top of each breast.
- Cover the skillet and simmer on low heat for 15-20 minutes, or until the chicken is cooked through and the filling is melted and gooey.
- Serve:
- Serve the stuffed chicken breasts with a generous spoonful of tomato sauce. Garnish with fresh herbs or additional grated cheese if desired. Enjoy warm with rice, pasta, or a side salad.
