  • Bread crumbs: 100 g (3.5 oz)
  • Black pepper: 2 g (0.1 oz)
  • Salt: 3 g (0.1 oz)
  • Sweet paprika: 2 g (0.1 oz)
  • Granulated garlic: 2 g (0.1 oz)
For Cooking:
  • Butter: 40 g (1.4 oz)
  • Black pepper: 2 g (0.1 oz)
  • Onion: 4 pcs, finely chopped
  • Garlic: 2 cloves, minced
  • Tomato sauce: 200 g (7.1 oz)
  • Salt: 3 g (0.1 oz)
  • Black pepper: 2 g (0.1 oz)
  • Brown sugar: 5 g (0.2 oz)
For the Filling:
  • Cheese: 70 g (2.5 oz), grated

Instructions

  1. Prepare the Chicken Breasts:
    • Season the chicken breasts with salt and black pepper on both sides.
    • Using a sharp knife, carefully create a pocket in each chicken breast, making sure not to cut through.
  2. Make the Filling:
    • Finely chop the mushrooms and place them in a bowl.
    • Add the processed cheese and grated cheese, and mix until combined.
    • Stuff each chicken breast pocket with the mushroom-cheese mixture, pressing gently to ensure the filling is securely inside.
  3. Set Up the Breading Stations:
    • Place the flour in one bowl, beat the eggs in another, and mix the breadcrumbs with black pepper, salt, sweet paprika, and granulated garlic in a third bowl.
  4. Bread the Chicken:
    • Dredge each stuffed chicken breast first in flour, then dip in the beaten eggs, and finally coat with the seasoned breadcrumbs.
    • Set the breaded chicken aside on a plate.
  5. Cook the Chicken:
    • Heat butter in a large skillet over medium heat. Place the breaded chicken breasts in the pan and cook for about 5 minutes on each side, or until golden brown and crispy.
    • Once browned, remove the chicken from the skillet and set aside.
  6. Prepare the Tomato Sauce:
    • In the same skillet, add the chopped onions and minced garlic. Sauté until the onions are soft and translucent.
    • Stir in the tomato sauce, salt, black pepper, and brown sugar. Mix well and simmer for 3-5 minutes, allowing the flavors to meld.
  7. Combine and Simmer:
    • Place the browned chicken breasts back into the skillet with the tomato sauce, spooning sauce over the top of each breast.
    • Cover the skillet and simmer on low heat for 15-20 minutes, or until the chicken is cooked through and the filling is melted and gooey.
  8. Serve:
    • Serve the stuffed chicken breasts with a generous spoonful of tomato sauce. Garnish with fresh herbs or additional grated cheese if desired. Enjoy warm with rice, pasta, or a side salad.
