Ingredients:

  • 100 g mozzarella cheese, grated
  • 30 g green onion, finely chopped
  • 1 tomato, thinly sliced
  • 2 eggs
  • 1/4 tsp salt
  • Pepper to taste
  • Butter for frying
  • 2 spinach leaves
  • 2 slices sandwich cheese
  • 1 tortilla (23 cm diameter)

 

Directions:

  1. Prepare the Egg Mixture: In a bowl, crack the eggs and add salt, pepper, and green onion. Stir well.
  2. Cook the Egg: Heat a piece of butter in a frying pan (23 cm diameter) over low heat. Pour the egg mixture into the pan and cover with a tortilla.
  3. Add Toppings: Spread mozzarella cheese on half of the tortilla, then layer with tomato slices, spinach leaves, and sandwich cheese.
  4. Fold and Cook: Fold the tortilla in half and press down lightly. Add a bit more butter to the pan. Flip the tortilla occasionally until it’s golden brown on both sides.
