Smoked Sausage and Biscuit Skillet: A Comforting One-Pan Meal

Ingredients

โ€“ 1 lb smoked sausage, sliced
โ€“ 1 tbsp olive oil
โ€“ 1 onion, diced
โ€“ 1 red bell pepper, diced
โ€“ 1 green bell pepper, diced
โ€“ 2 medium potatoes, diced
โ€“ 1 cup diced tomatoes (canned or fresh)
โ€“ 1 cup chicken broth
โ€“ 1 tsp smoked paprika
โ€“ 1/2 tsp thyme
โ€“ Salt and pepper to taste
โ€“ 1 can refrigerated biscuits
โ€“ Fresh parsley for garnish


Instructions

1. Preheat your oven to 375ยฐF (190ยฐC).
2. Heat olive oil in a large oven-safe skillet over medium heat. Sautรฉ sausage slices until lightly browned. Remove and set aside.
3. Add onion, bell peppers, and potatoes to the skillet. Cook until softened, about 5-7 minutes.
4. Stir in diced tomatoes, chicken broth, smoked paprika, thyme, salt, and pepper. Bring to a simmer, then add the sausage back in.
5. Arrange biscuits on top of the stew, spacing them evenly. Transfer the skillet to the oven and bake for 12-15 minutes, or until biscuits are golden and cooked through.
6. Garnish with fresh parsley and serve warm.
