Ingredients:

  • 95ml water
  • 1.5g salt
  • 150g flour
  • Fresh green onions
  • Pinch of baking soda
  • 1/4 cup flour
  • 1/4 cup corn starch
  • 20g salted butter
  • Cheese (optional)
  • Vegetable oil for frying

Instructions:

  1. Prepare the Dough:
    • Mix 95ml of water with 1.5g of salt until dissolved.
    • Gradually add 150g of flour to the water mixture, mixing well until a dough forms.
    • Knead the dough with your hands until smooth.
    • Cover and let the dough rest for 10 minutes.
  2. Divide and Shape the Dough:
    • After resting, divide the dough into 4 equal pieces.
    • Shape each piece of dough into a round ball.
  3. Prepare the Filling:
    • Chop some fresh green onions and place them in a bowl.
    • Add a pinch of baking soda to the chopped green onions (this helps maintain their green color).
    • Prepare some cheese if desired.
  4. Roll Out the Dough:
    • Mix 1/4 cup of flour and 1/4 cup of corn starch in a small bowl.
    • Sprinkle some of the flour and corn starch mixture on a flat surface.
    • Take a piece of dough, flatten it with your hand, and roll it out with a rolling pin to a diameter of about 18 cm.

    • Brush the melted butter onto the rolled-out dough.
    • Sprinkle the chopped green onions and cheese (if using) on top of the butter.
    • Fold the dough using your preferred method (either simply folding it or cutting and folding as shown in the video).
  6. Cook the Pancakes:
    • Heat a pan over medium heat and add a little vegetable oil.
    • Place the assembled pancake in the pan and brush the top with oil.
    • Fry for 2 minutes on each side or until both sides are golden brown.
  7. Serve:
    • The outside should be crispy and the inside soft.
