Preparation
- Prepare the Potatoes: Peel and chop the potatoes into bite-sized pieces.
- Season the potatoes with salt, pepper, and rosemary.
- Cook in a large skillet over medium heat until the potatoes are cooked through and browned, stirring occasionally.
- Prepare the Eggs: In a bowl, crack the eggs and season with salt and pepper.
- Beat the eggs until well mixed and set aside.
- Prepare the Vegetables: Chop the onion and bell pepper, and mince the garlic.
- Chop the tomatoes and set aside.
- Cook the Vegetables and Ground Beef: In the same skillet, heat a bit of oil and add the onion, garlic, and bell pepper. Cook for about 5 minutes until softened.
- Add the ground beef to the skillet. Season with salt, pepper, and chili pepper. Cook until the beef is browned.
- Assemble the Bake: Preheat your oven to 180°C (360°F).
- In a baking dish, layer half of the cooked potatoes.
- Spread the ground beef and vegetable mixture over the potatoes.
- Pour the beaten eggs over the top.
- Layer the remaining potatoes on top.
- Sprinkle the grated cheese evenly over the top.
- Bake: Bake in the preheated oven for 30 minutes until the top is golden and the cheese is melted.
- Serve: Remove from the oven and let it cool for a few minutes.
- Garnish with chopped parsley and serve warm.
