Ingredients
– 2 cod fillets (about 6 oz each)
– 1 tbsp olive oil
– 1 tsp paprika
– 1/2 tsp garlic powder
– Salt and pepper to taste
– 1 ripe avocado, diced
– 1/4 cup red onion, finely chopped
– 1 tbsp fresh cilantro, chopped
– Juice of 1 lime
– Salt and pepper to taste
Instructions
. **Season the Fish:** Pat the cod fillets dry with paper towels. Rub them with olive oil, then season with paprika, garlic powder, salt, and pepper on both sides.
2. **Cook the Cod:** Heat a skillet over medium-high heat. Add a small drizzle of olive oil to the pan. Once hot, add the cod fillets and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
3. **Prepare the Avocado Salsa:** In a small bowl, gently combine the diced avocado, red onion, chopped cilantro, lime juice, salt, and pepper.
4. **Assemble and Serve:** Place the cooked cod on a plate and top with a generous spoonful of avocado salsa. Serve immediately.
