Ingredients:

  • 70g dried apricots
  • 50g walnuts, chopped
  • 70g hazelnuts
  • 30g pumpkin seeds
  • 40g sunflower seeds
  • 20g sesame seeds
  • 20g flaxseed
  • 60g almonds
  • 20g pine nuts
  • 40ml natural honey
  • 1 egg white
  • A pinch of salt

 

Directions:

  1. Soak the Apricots: Place the dried apricots in cold water for 15-20 minutes to soften.
  2. Prep the Nuts and Seeds: Chop the walnuts and hazelnuts. Mix them in a bowl with the pumpkin seeds, sunflower seeds, sesame seeds, flaxseed, almonds, and pine nuts.
  3. Combine: Drain the apricots and chop them finely. Add them to the nut and seed mixture. Stir in the honey, egg white, and a pinch of salt.
  4. Form Cookies: Line a baking sheet with parchment paper. Form the mixture into cookies and place them on the sheet.
  5. Bake: Preheat your oven to 180°C (360°F). Bake the cookies for 15-20 minutes until golden. Let them cool before serving.
