This layered Tex-Mex casserole is packed with seasoned ground beef, black beans, tortillas, and melty cheese, all baked to perfection. Topped with avocado and cilantro, it’s a comforting, flavor-packed dish perfect for family dinners or gatherings!


Ingredients

– 1 lb ground beef
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 packet taco seasoning
– 1 can (15 oz) diced tomatoes, drained
– 1 can (10 oz) mild enchilada sauce
– 1 can (15 oz) black beans, drained and rinsed
– 6 small flour or corn tortillas, torn into pieces
– 2 cups shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 avocado, diced (for garnish)
– Fresh cilantro, chopped (for garnish)


Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
3. Add the minced garlic and taco seasoning to the skillet, and cook for 1-2 minutes until fragrant.
4. Stir in the diced tomatoes, enchilada sauce, and black beans. Simmer for 5 minutes to combine flavors.
5. Layer half of the torn tortillas on the bottom of the prepared baking dish. Spread half of the beef mixture over the tortillas, then sprinkle with half of the shredded cheeses.
6. Repeat the layers with the remaining tortillas, beef mixture, and cheeses.
7. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and melted.
8. Garnish with diced avocado and fresh cilantro before serving.

Notes

### Tip: Serve with sour cream and a side of Spanish rice to complete this Tex-Mex feast.
### Cooking Tip: For an extra kick, add chopped jalapeños to the beef mixture or use spicy enchilada sauce.
