Ingredients
– 6 bone-in, skin-on chicken thighs
– 1 tbsp olive oil
– Salt and pepper to taste
– 3 cloves garlic, minced
– 1/2 cup chicken broth
– 2 tbsp honey
– 2 tbsp Dijon mustard
– 1 tbsp fresh lemon juice
– Fresh thyme sprigs (for garnish)
Instructions
1. Preheat your oven to 400°F (200°C).
2. Season the chicken thighs with salt and pepper on both sides.
3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-6 minutes until the skin is golden and crispy. Flip and cook for another 2 minutes.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
6. Pour in the chicken broth, honey, Dijon mustard, and lemon juice, stirring to combine. Bring the mixture to a simmer.
7. Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top.
8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.
9. Garnish with fresh thyme sprigs and serve hot.
