- Prepare Oven and Muffin Tin: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners to prevent sticking and make cleanup easier.
- Cook Bacon: In a skillet over medium heat, cook the bacon pieces until crispy. Use a slotted spoon to remove the bacon from the skillet and drain on paper towels.
- Cook Onions and Potatoes: In the same skillet, cook the finely chopped onion until softened, about 3-4 minutes. Add the grated potatoes and cook for another 5-7 minutes until they start to soften. Remove from heat. This step ensures the vegetables are cooked through and enhances their flavors.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, half and half, and Tabasco sauce until well combined. This mixture will be the base of the muffins, providing structure and flavor.
- Combine Ingredients: Add the cooked bacon, onion and potato mixture, chopped spinach, and half of the shredded cheddar cheese to the egg mixture. Stir until evenly combined. This ensures that each muffin is packed with flavor and texture in every bite.
- Fill Muffin Cups: Divide the mixture evenly among the muffin cups, filling each about 3/4 full. Top with the remaining shredded cheddar cheese for a delicious, melty topping.
