  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp granulated sugar

For the Chocolate Filling:

  • 1 cup (170g) semi-sweet chocolate chips (or dark chocolate for a richer flavor)
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 4 large eggs (pasteurized, if available)
  • 1 tsp pure vanilla extract

For the Topping:

  • 1 cup (240ml) heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Chocolate shavings or cocoa powder for garnish

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the bottom of a glass or measuring cup to press it evenly.
  4. Bake for 10 minutes, then set aside to cool completely.

Step 2: Make the Chocolate Filling

  1. Melt the chocolate chips in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring after each. Let cool slightly.
  2. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  3. Gradually add the melted chocolate to the butter mixture, beating until smooth.
  4. Add the eggs one at a time, beating for at least 3 minutes after each addition to create a silky texture.
  5. Mix in the vanilla extract and ensure the filling is smooth and creamy.

Step 3: Assemble the Pie

  1. Pour the chocolate filling into the cooled crust, spreading it evenly with a spatula.
  2. Cover with plastic wrap and chill in the refrigerator for at least 4 hours, or until firm.

Step 4: Whip the Cream Topping

  1. In a cold mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread or pipe the whipped cream over the chilled chocolate filling.

Step 5: Garnish and Serve

  1. Top with chocolate shavings or a light dusting of cocoa powder.
