Ingredients
– 3 cups mashed potatoes (cooled and firm)
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 1 egg, beaten
– 1/2 cup all-purpose flour
– 1 cup breadcrumbs
– 3 tablespoons unsalted butter or olive oil
– Salt and black pepper to taste
– 2 tablespoons chopped fresh chives (for garnish)
Instructions
1. In a bowl, mix the mashed potatoes, mozzarella cheese, Parmesan cheese, and egg until well combined. Season with salt and pepper.
2. Divide the mixture into equal portions and shape into flat patties.
3. Dredge each patty lightly in flour, then coat with breadcrumbs.
4. Heat butter or olive oil in a skillet over medium heat. Fry the patties for 3-4 minutes on each side, or until golden brown and crispy.
5. Garnish with fresh chives and serve hot with your favorite gravy or dipping sauce.
