  • 1/2 cup all-purpose flour (use gluten-free flour if preferred)
  • 1/4 cup grated Parmesan cheese (optional for added flavor)
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh parsley (or 1/2 teaspoon dried parsley)
  • Olive oil or vegetable oil, for frying

Instructions

1. Prepare the Cauliflower

  • Steam or boil the cauliflower florets until they are tender, about 5–7 minutes. Drain well and allow them to cool slightly.
  • Once cooled, place the cauliflower in a mixing bowl and use a fork to mash it into small, rice-sized pieces. It’s okay if there are a few larger chunks for added texture.

2. Mix the Batter

  • Add the flour, Parmesan cheese, eggs, minced garlic, salt, pepper, and parsley to the cauliflower. Stir until everything is well combined and forms a thick, spoonable batter.

3. Form the Fritters

  • Heat a few tablespoons of oil in a large skillet over medium heat.
  • Using a spoon, scoop a small portion of the batter and drop it into the hot skillet, gently flattening it with the back of the spoon to form a round fritter. Repeat until the skillet is filled, leaving space between each fritter.

4. Cook the Fritters
