Ingredients
– 6 medium potatoes, peeled and boiled
– 1 1/2 cups sour cream
– 2 cups shredded cheddar cheese
– 1/2 cup mozzarella cheese
– 1/4 cup butter, melted
– 6 slices bacon, cooked and crumbled
– 3 green onions, sliced
– Salt and black pepper to taste
Instructions
1. Preheat oven to 375°F (190°C). Mash the boiled potatoes until smooth.
2. Stir in sour cream, melted butter, salt, and pepper. Fold in 1 1/2 cups cheddar cheese, half of the bacon, and half of the green onions.
3. Spread the mixture evenly into a greased 9×13-inch baking dish. Sprinkle the top with the remaining cheddar and mozzarella cheese.
4. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
5. Top with the remaining bacon and green onions before serving warm.
