Ingredients
– 8 oz farfalle (bowtie) pasta
– 4 slices of bacon, chopped
– 2 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 cups fresh spinach, roughly chopped
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions
1. Cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and set it aside, leaving the bacon drippings in the skillet.
3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
4. Pour in the heavy cream, stirring to combine. Let it simmer for 2-3 minutes to thicken slightly.
5. Add the grated Parmesan cheese and stir until the sauce is smooth and creamy. Season with salt and pepper.
6. Add the chopped spinach and cooked pasta to the skillet, tossing to coat the pasta in the sauce and wilt the spinach.
7. Sprinkle the crispy bacon over the pasta, and garnish with fresh parsley before serving.
Notes
Tip: Serve with extra Parmesan cheese and a side of garlic bread for a complete meal.
Cooking Tip: If you prefer a lighter sauce, substitute half of the heavy cream with milk.
