Ingredients
8 oz lo mein noodles
1 lb chicken breast, thinly sliced
2 tablespoons vegetable oil
1/2 cup onion, sliced
1 cup bell peppers, sliced (red, yellow, or green)
1 cup carrots, julienned
1 cup snap peas
2 cloves garlic, minced
1 tablespoon ginger, minced
For the Sauce:
1/4 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
1. Cook the Noodles:
Boil the lo mein noodles according to the package instructions. Drain the noodles and set them aside.
2. Prepare the Sauce:
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and the cornstarch mixture. Set aside to use later.
3. Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and stir-fry until browned and fully cooked, about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
4. Cook the Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions, bell peppers, julienned carrots, and snap peas. Stir-fry the vegetables for about 3-4 minutes until they become tender-crisp.
5. Add Garlic and Ginger:
Add the minced garlic and ginger to the skillet with the vegetables. Stir-fry for about 1 minute until fragrant.
6. Combine Ingredients:
Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables, stirring to coat everything evenly. Let the mixture cook for 2-3 minutes until the sauce thickens and coats all the ingredients.
7. Add the Noodles:
Add the cooked lo mein noodles to the skillet. Toss everything together to ensure the chicken, vegetables, and noodles are well mixed with the sauce.
8. Serve:
Serve hot, garnished with green onions or sesame seeds if desired. Enjoy your homemade Chicken Lo Mein!
