Ingredients

– 1 lb ground beef
– 1 small onion, chopped
– 1 packet taco seasoning
– 1 cup corn kernels (fresh, canned, or frozen)
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (15 oz) diced tomatoes with green chilies, undrained
– 1 cup salsa
– 8-10 small flour or corn tortillas, cut into halves
– 2 cups shredded Mexican blend cheese
– Sliced black olives, for garnish
– Chopped tomatoes, for garnish
– Sour cream and chopped cilantro, for garnish


Instructions

1. **Prepare the Beef Mixture:** Preheat oven to 375°F (190°C). In a large skillet over medium heat, cook the ground beef with chopped onion until beef is browned and onion is softened. Drain any excess fat, then add taco seasoning, corn, black beans, diced tomatoes with green chilies, and salsa. Stir well and let simmer for 5-7 minutes to blend flavors.
2. **Layer the Casserole:** In a 9×13 inch baking dish, spread a thin layer of the beef mixture. Place a layer of tortilla halves over it, followed by more beef mixture and a sprinkle of shredded cheese. Repeat layers, ending with a layer of cheese on top.
3. **Bake:** Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
4. **Garnish and Serve:** Let the casserole cool for 5-10 minutes, then top with sliced black olives, chopped tomatoes, sour cream, and cilantro.
