Ingredients

– 4 large flour tortillas
– 2 cups cooked, shredded chicken
– 1 cup cooked rice
– 1 cup black beans, rinsed and drained
– 1 cup shredded cheese (Monterey Jack or cheddar)
– 1 cup enchilada sauce
– 1/2 cup sour cream
– 1/2 cup green chili sauce
– Fresh cilantro, chopped (for garnish)
– Diced tomatoes (for garnish)
– Salt and pepper to taste


Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. In a mixing bowl, combine the shredded chicken, cooked rice, black beans, half of the shredded cheese, and the enchilada sauce. Season with salt and pepper to taste.
3. Divide the chicken mixture evenly among the tortillas, roll them up tightly, and place them seam-side down in the baking dish.
4. In a separate bowl, mix the sour cream and green chili sauce until smooth. Pour this sauce over the rolled tortillas in the dish.
5. Sprinkle the remaining shredded cheese over the top.
6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
7. Garnish with chopped cilantro and diced tomatoes before serving.
