  • 1 1/2 cups rolled oats (old-fashioned or quick-cooking)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup mini chocolate chips
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and fully combined.
  • Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.
  • In a separate bowl, combine the flour, rolled oats, salt, baking soda, and baking powder.
  • Gradually add the dry ingredients into the wet mixture, beating slowly to avoid overmixing.
  • Stir in the mini chocolate chips and semi-sweet chocolate chips.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • Using a medium cookie scoop, drop dough balls onto the prepared cookie sheets, spacing them about 1½ inches apart.
  • Slightly flatten the tops of each cookie dough ball to ensure even baking.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden, and the centers are just set.
  • Let the cookies cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.
