8 slices thick-cut bacon
4 tablespoons mayonnaise
3 tablespoons grated Parmesan cheese (optional)
4 thick slices sourdough bread
8 ounces sharp cheddar cheese, shredded
4 ounces Monterey Jack or pepper jack cheese, shredded


Instructions

  • Arrange the bacon in a single layer in a large, cold skillet. Turn the heat to medium and cook the bacon until it becomes crispy, about 8–10 minutes. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
  • In a small bowl, mix the mayonnaise and Parmesan cheese (if using). Spread half of the mixture evenly over one side of each slice of sourdough bread.
  • Heat the cleaned skillet over medium-low heat. Place the bread, mayo side down, into the skillet and cook for 2-3 minutes until the bread is lightly golden. While cooking, spread the remaining mayo mixture over the top side of each slice.
  • Flip the bread slices so the fresh mayo side is now on the skillet. Evenly distribute the shredded cheddar and Monterey Jack cheeses over the slices. Cover the skillet with a lid and cook for another 3-5 minutes, until the cheese is fully melted and the bread is golden and crisp.
  • Remove the bread from the skillet and add the crispy bacon slices on top of the cheese. Close the sandwich by placing the bread slices together, and let it cool for 1-2 minutes before cutting.
