Ingredients
apple cider (1 cup)
all-purpose flour (2 cups)
granulated sugar (3/4 cup)
baking powder (1 1/2 teaspoons)
baking soda (1/2 teaspoon)
ground cinnamon (1 teaspoon)
ground nutmeg (1/4 teaspoon)
salt (1/2 teaspoon)
egg (1 large)
unsalted butter, melted (4 tablespoons)
milk (1/2 cup)
vanilla extract (1 teaspoon)
cinnamon sugar mix (1/2 cup, for coating)
Instructions
1. In a saucepan, simmer apple cider until reduced to about ¼ cup. Let cool.
2. Preheat oven to 350°F (175°C) and grease a donut pan.
3. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
4. In another bowl, mix the reduced cider, egg, melted butter, milk, and vanilla extract. Add wet ingredients to dry ingredients, mixing until just combined.
5. Spoon batter into the donut pan, filling each mold about ¾ full.
6. Bake for 10-12 minutes, or until donuts spring back when lightly touched. Let cool for 2 minutes before removing from the pan.
7. While warm, toss donuts in a cinnamon sugar mix until fully coated.
