Ingredients

Units Scale

For the Filling:

  • 300g fresh spinach
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 egg (for filling)
  • Salt, to taste
  • 1/2 tsp black pepper, freshly ground
  • 250g ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

For the Pastry:

  • 1 puff pastry sheet
  • 1 egg, beaten with 1 tbsp milk (for egg wash)
  • Sesame seeds (optional, for sprinkling)

Instructions

  1. Prepare for Baking:
    • Preheat your oven to 200°C (400°F).
    • Line a baking tray with parchment paper to prevent sticking.
  2. Cook the Spinach:
    • Heat 3 tbsp of olive oil in a skillet over medium heat.
    • Add the minced garlic and sauté until fragrant (about 1 minute).
    • Add the spinach to the skillet and cook until wilted and reduced in volume.
    • Season with salt and black pepper to taste.
    • Let the spinach mixture cool slightly to avoid melting the cheese when mixing.
  3. Make the Filling:
    • In a large mixing bowl, combine the cooled spinach with ricotta, mozzarella, and Parmesan cheeses.
    • Add 1 beaten egg to the mixture and stir until well combined and smooth.
  4. Assemble the Rolls:
    • Roll out the puff pastry sheet on a lightly floured surface.
    • Spread the spinach and cheese filling evenly across the pastry, leaving a small margin around the edges.
    • Roll the pastry tightly into a log shape, ensuring the filling is sealed inside.
    • Seal the edges of the pastry with a little water to hold the shape.
  5. Prepare for Baking:
    • Slice the rolled pastry into 2-inch rolls and arrange them on the prepared baking tray.
    • Brush the tops of the rolls with the egg wash.
    • Sprinkle with sesame seeds for added texture and flavor (optional).
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and puffed up.

Notes

  • Use high-quality puff pastry for the best texture.
  • Ensure the spinach is well-drained before adding to the filling to prevent sogginess.
  • You can prepare the rolls ahead of time and freeze them before baking.
  • Experiment with different cheeses like feta or goat cheese for a unique twist.
