For the Filling:
- 2 cups fresh spinach, cleaned and chopped
- 4 slices bacon
- 1/4 cup diced onions
- 1 tablespoon minced garlic
- 1/2 cup grated Parmesan cheese
- 8 oz (1 package) cream cheese, softened
- 1 egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried dill
- 1/4 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
For the Puff Pastry:
- 1 sheet puff pastry dough
- Flour (for dusting)
- 1 egg (for egg wash)
Instructions
1. Cook the Bacon:
- In a large pan over medium heat, cook the bacon until crispy, then remove from the pan and set aside. Chop the bacon into small pieces when cooled.
- Drain excess bacon grease from the pan, leaving about 2 tablespoons.
2. Sauté the Vegetables:
- In the same pan with the bacon grease, add the diced onions and sauté for 3-4 minutes until softened.
- Add the minced garlic and sauté for 1 more minute, then add the chopped spinach and cook until wilted.
- Remove the spinach, onions, and garlic from the pan and set aside.
3. Make the Filling:
- In a large mixing bowl, combine the sautéed spinach mixture, chopped bacon, and Parmesan cheese.
- In a separate bowl, combine the softened cream cheese, egg, garlic powder, dill, oregano, and pepper. Mix until smooth and well combined.
- Add the cream cheese mixture to the spinach mixture and stir until everything is evenly combined.
- Fold in the chopped green onions.
4. Prepare the Puff Pastry:
- Flour a clean surface and roll out the sheet of puff pastry until it’s smooth and even.
- Cut the dough into squares large enough to fit into a greased muffin tin.
5. Assemble the Puffs:
- Place each puff pastry square into the greased muffin tin, letting the edges hang over.
- Add 1-2 tablespoons of the spinach and bacon mixture into each puff.
- Fold the edges of the pastry toward the center, covering part of the filling.
6. Egg Wash and Bake:
- In a small bowl, beat one egg and use a pastry brush to apply an egg wash over the tops of the puff pastries.
- Preheat the oven to 400°F (200°C).
- Bake the puff pastries for 20-24 minutes or until golden brown and crispy.
7. Serve:
- Once baked, remove the puff pastries from the oven and let them cool slightly.
- Serve warm and enjoy the crispy, cheesy, and savory flavors.
