Ingredients
– 2 lbs chicken breasts
– 1/3 cup honey
– 1/3 cup low-sodium soy sauce
– 3 garlic cloves, minced
– 1/4 cup ketchup
– 2 tbsp cornstarch
– 1/4 cup water
– Sesame seeds and chopped parsley for garnish
– Cooked rice for serving
Instructions
1. Place chicken breasts in a slow cooker.
2. In a bowl, whisk together honey, soy sauce, garlic, and ketchup. Pour over the chicken.
3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easy to shred.
4. Remove the chicken, shred it with two forks, and set aside.
5. In a small bowl, mix cornstarch with water and stir into the sauce in the slow cooker. Cook on high for 10-15 minutes until the sauce thickens.
6. Return the shredded chicken to the sauce and toss to coat. Serve over rice, garnished with sesame seeds and parsley.
