Ingredients:

  • 1/3 cup (70g) sugar
  • Milk (enough to reduce by half)
  • 2 eggs

Once the caramel is ready, remove the pan from the heat and transfer the caramel to a bowl immediately to stop the cooking process. Allow it to cool and harden slightly.
  2. Prepare the pudding mixture: In a separate pan, heat the milk and reduce it by half. Let it cool slightly. In a bowl, whisk 2 eggs. Then, gradually add the reduced milk to the eggs, whisking continuously to combine.
  3. Combine and strain: Pour the egg and milk mixture over the hardened caramel in the bowl. Strain the mixture to ensure a smooth texture.
